Burnt Basque Cheesecake (GF)

More burnished to a dark mahogany than burnt, this cheesecakes's beautiful, dark, caramelized exterior hides a creamy, light & gooey interior.

The original recipe is said to have been developed in 1970 in San Sebastian in Basque Country, Spain.

This crustless cheesecake is delicious served simply on its own, or with a serve of fresh berries or a fruit compote.
